A Global Dining Experience

Executive chef Brian Molloy has been part of the Nikki Beach family since meeting the founders Jack and Lucia Penrod in Miami in 2001. The Irish born chef soon realised he shared the same values as the Penrods and he joined the Nikki Beach team, heading up Nikki Beach restaurants in Brazil, Mexico and Marbella.

Molloy’s career has led him to cook up a storm in the four corners of the globe. In Australia he worked for billionaire entrepreneur Kerry Packer for five years, and successfully ran his own restaurant in Ireland for two years. He has also prepared food live on television for the Travel Channel, NBC, and ABC.

As executive chef for Nikki Beach, Molloy has had the pleasure of cooking for a firmament of stars, including Robert de Niro, Al Paccino, Jennifer Lopez, Joaquin Cortés and Prince Albert of Monaco, among others.

Using only the finest of ingredients, Molloy classes Nikki Beach’s global cuisine as pure “simplicity”. Offering a mouthwatering selection of appetizers, salads, main dishes and sushi, Nikki Beach classics include the Hot Appetizer Platter with St. Tropez Jumbo Lump Crab Cakes, Marbella Shrimp Pil Pil, Puerto Vallarta Chicken Quesadilla, Cornmeal Crusted Calamari and Warm Goat Cheese Salad, the Seared Beef Salad, served with a Blue Cheese and White truffle infused vinaigrette and the Chicken Satay served with Asian Vegetables in Spicy Peanut Sauce and Bamboo Steamed Jasmine Rice.

Featuring a new dining area close to the lapping waves and golden sand, and with the utopian backdrop of swaying palms and alcoves of tee-pees, from 11am-1am, Nikki Beach is all set to serve up a feast for the senses every day of the week throughout the summer.
